Fried Rice - Leftovers Style

I just made this for lunch, and it needs to be logged.

1 or 2 eggs
Whatever veggies you have left over, chopped (optional)
Carrots, Celery, and/or Onion (chopped, optional, delicious)
Leftover meat (optional)
Leftover rice
Soy Sauce
Oil
Spices

Scramble the eggs.
Add leftover veggies and/or carrots, celery, onion, and/or meat.
Add a little oil, salt and pepper, and spices.  I used garlic olive oil, paprika, and garlic powder.
When the vegetables are soft, add the rice and a little more oil if you need it.
Add soy sauce, saute for a couple of minutes, eat.

I didn't expect this, but bits of the rice and seasoning crisped up.  It was delightful.

I forgot to comment on this. I had to laugh, because we have been doing this for years. It works remarkably well on crappy take out rice that turns into little plastic pellets upon hitting the fridge. Another good addition is egg. Starting with some scrambled egg drizzled over sesame oil right before or over the veggies tastes good. Adding the egg *after* the rice is...interesting. We've tried it. The texture is...interesting.

This really should have started with "go to Chinatown and buy a boatload of dirt cheap Thai basil".
