Beans and Rice
Beans and Rice for Happy Peasants
1 cup rice
1 can Goya black beans
1 can Goya little red beans (or whatever beans)
Sofrito*
Sriracha Sauce*
Cumin (seed if you can find it, or powder)
Onion (optional)
Shredded Mozzarella
*Sofrito. Does your supermarket have a Goya section? Good! It's right there with the beans. Costs about $1 a jar. So very worth it.
*Sriracha Sauce. Also known as Rooster Sauce. Tall red bottle with Rooster on front, some call it Thai, some Vietnamese, it's actually American. Good supermarkets have it, these days. Contains no Rooster.
Cook rice.
While rice cooks, dice and saute onion. Or don't. Skip right to the beans. Rinse beans and dump on onion/absence of onion. Trow in a healthy sprinkle of cumin. ("Comino" if you buy it in Ridgewood.) Cook the beans on low. Squirt in some sriracha to taste, or to the taste of your guests, depending on their spice tolerance and how much you like them.
When the rice is cooked, spoon about a third of a jar of sofrito into the cooked rice and mix. It will turn orange and yummy.
Dump the yummy rice in a pretty serving bowl. Dump the spicy beans on top of the yummy rice. Stir when you serve. Bring the shredded mozzarella to table, and encourage all present to take a liberal handful. Dairy protein complements bean protein. And cheese is yummy. Vegans can have it bland and sad. They chose their fate.
