Curried Chicken - while we're on the topic
I hate curry powder. This involves none of that. Instead, get yourself some Patak's concentrated curry paste. Any flavor. Make sure it is the concentrated paste, not the sauce in a jar.
2 spoonfulls (sometimes more) Patak's paste.
Can o diced tomatoes (14 oz)
Skinless chicken breasts cut into bite sized bits (nearly all of my chicken recipes involve bite sized bits. It helps to have a spouse who likes to cut raw meat and clean up afterward. And an ulu.)
Salt to taste
You can cook this in a no-stick skillet, but if you cook it in an iron skillet the tomatoes pull some of the iron from the pan and make it tre good for anemic Olssons. (Pansies.) Iron also gives the dish a deeper finer color.
If you use iron, use a dollop of vegetable oil. Drop in the chicken bits. Dump the can o tomatoes (and juice) right on top. Spoon out two heaping spoonfuls of curry paste. Sprinkle some salt. Mix. Let simmer on low heat until it looks thick and saucy like something you would like to eat.
Eat with rice.
(I always forget the salt.)
