Potato Soup

I'd call this a childhood favorite, only when I was a child I hated the stuff. At some point my brain decided to think better of itself. No Olsson collection is complete without:

Potato Soup

Straight from Recipes for a Small Planet

1/4 cup oil (whatever. A blorp.)
2 cups chopped onions (a medium onion)
1 cup diced carrots
1 cup chopped celery
6 medium potatoes, diced (I leave the skins on.)
1 quart stock (Vegetable stock works great and renders the recipe vegetarian. Chicken is also great.)
2 tsp salt
1 tsp marjoram
1 tsp dill seeds
1/2 tsp paprika (just tried this with some kick ass paprika and the soup turned orange)
1 tsp caraway seeds
2 cans evaporated milk (fat free works fine)

Heat the oil in a large soup pot; saute the veggies and potatoes until onions are transparent.
Pour in the stock, salt, and spices (not the milk), bring to boil, cover and simmer about 1 hour until the potatoes are tender but won't fall apart.
When it is ready to serve add the milk.

Great with toast. Or beer. Or both.

I vote for both.

It always surprises me how appealing carrots, celery, and onions suddenly become when cooked together. Deeelicious.
