Sour Milk Raisin Cake
Chocolate sour milk raisin cake (I know, there should be a simpler title, but...).
1/4 c. raisins
1/2 c. boiling water
1 Tbsp vinegar
1/2 c. milk
1 c. sugar
1/4 c. vegetable oil
1 egg, lightly beaten
1/4 c. cocoa
1 c. flour
1/4 tsp salt
1 tsp baking soda
1/2 tsp vanilla extract
Soak the raisins in the water. Add the vinegar to the milk. Stir. Beat sugar and oil together by hand in a large bowl. Add lightly beaten egg. Beat well again. Drain the raisins and sprinkle with 2 Tbsp of flour. Set aside.
Combine dry ingredients and alternate adding dry mixture and milk to the egg mixture. Fold in the raisins and vanilla extract.
Bake in one 9" greased and floured pan at 325 F for about forty minutes. May be served plain, but a thin lemon icing is also recommended.
