Swedish Rice Porridge
As with the Berry Compo(s)te, I'll assume that the daughters Olsson are pretty familiar with this recipe. However, it's a classic to me, and I always forget the ratio, so here's one for the archives.
I make this every once in a while in scaled down proportions (compared to the batch Mom makes at Christmas). Today was one of those grey days when something special was in order, so I made some porridge. The milk to rice ratio is 6 to 1, but I'm writing out my proportions so that I remember, because it was a good size.
1/2 c white rice
3 c milk
cinnamon
sugar
butter
a little more milk
Wash rice. Combine with 3c milk, let simmer over medium-low heat until the rice gets overcooked and mushy, and the milk evaporates quite a bit, similar to the consistency of a thick oatmeal.
Serve in bowls (or teacups) with a spoonful of cinnamon and sugar (best mixed together ahead of time), a pat of butter, and a drizzle of milk on top.

Thanks for the proportions. This recipe perplexes me. I've managed to get it wrong more often than right. Bad Olsson. Bad.
