Seafarer's Punch
This showed up in a book. On the last day of a half year whaling voyage, in sight of the home port of Nantucket, the officer's gathered at the captain's table to drink rum punch and celebrate a safe voyage. The quantity measures are mine and bear tweaking to taste.
Hot water
Lemon
Molasses
Rum (Dark. Black Seal 151 is great.)
Heat water, then let sit and cool a bit while you prepare the rest.
1.5 Tablespoons molasses in the bottom of a mug
Squeeze in a small half wedge of lemon juice.
Cut a very thin round of lemon for garnish and add that too. (This makes good eating later.)
Add water until near to the top and stir.
The closer the water is to drinking temperature when you add the rum, the less alcohol will evaporate out. Add 2 ounces dark rum and stir in gently.
These quantities are for a fairly large mug.
