Zucchini Pancakes
Alex just ate Mitchell's weight in zucchini, so I'm posting.
Ina Garten's Zucchini Pancakes (shown with Alex's grilled prawns piri piri, soon to come)
2 medium zucchinis, grated
1 very small onion, grated
2 eggs
6-8 tbsp flour
1 tsp salt
1/2 tsp pepper
1 tsp baking powder
Mix the wet ingredients together, stir in the dry. Start with 6 tbsp flour, add 1 or 2 more if the batter is too wet. Look for something similar to the consistency of pancake batter. Heat up some olive oil and a little butter if you want the taste of butter, and drop by spoonfuls into the pan. Let them brown enough so that they're crispy on the outside. They act just like pancakes do when they're cooked on one side. Flip. When all are cooked, sprinkle a little more salt and pepper over the top. I added some lemon zest on top, too. These are really fulfilling in that they're crispy on the outside, gooey on the inside, and yet the batter is mostly zucchini. It good.
