Squid Salad

Tonight's dinner will definitely be one of our usuals from now on.  Not only was it really healthy, it was delicious and easy.  I made a salad of lettuce, tomato, scallions, and white beans, and dressed it with lemon juice, olive oil, and some pepper.  Then, I sauteed some garlic and shallots (which I happened to have leftover) in olive oil, and last, added squid and a bunch of paprika.  Serve the warm stuff over the cold stuff.  It's heavenly, cheaper than fish, and satisfies my calamari needs.  Alex said it "didn't taste healthy", which is a compliment.

Where did you get the squid? Is it fresh? Canned?

I got the squid fresh at our co-op (which is related to your co-op). I think it's more commonly sold frozen in supermarkets.

Incidentally, tonight's dinner is mashed sardines on toast. Maybe we're going through a phase.

Tried the recipe with added fresh basil just because it is abundant; gorgeous to serve, love the concept, came out very well although my squid didn't get golden like yours in the photo. But since the squid was the same price as shrimp at the market, I think I would personally prefer the shrimp. Will definately make this again. Thanks, Karel!
