Mom's Cranberry Orange Bread

Sift together:
4 C. flour
2 C. sugar
1 tsp. baking soda
1 tsp. salt
Add:
Rind of 2 Oranges (2 Tbsp)
Put into 2 cup measuring cup:
Juice of 2 Oranges
4 Tbsp. oil
Fill to 1 ½ cup mark with hot water.
Pour juice mixture into mixer bowl.
Add:
2 eggs,
beaten
2 C. Cranberries,
cut in halves
1 Cup chopped walnuts
Stir above into sifted ingredients.
Pour into two large loaf pans.
Bake at 350 degrees for 1 hour.
Makes 2 large loaves.

NOTE: While grating orange rind it’s important to avoid the
white stuff directly underneath the orange skin. The white part is bitter.
If you have a food processor or blender available, it is easier
than grating to peel small pieces of the orange rind off and drop them in the
processor/blender with some of the sugar from the recipe. This creates a nice
orange sugar that is an excellent texture for baking.
NOTE: doubling this recipe requires a huge bowl for mixing and becomes
too difficult to mix.
