Brown Butter Cauliflower

We just tried this for the first time and it checked some boxes (mainly: low maintenance, different, both of us liked) so I'm documenting it here to keep it on my radar.

This is the "meh, let's see what's in the kitchen" version.

Ingredients:
  • Cauliflower. I used a steam-in-the-bag bag
  • Panko or something in the breadcrumb family. Rice crispies would also be good. Enough to generously cover the cauliflower. I used about 1/2 cup
  • Butter - a couple tablespoons (enough to coat the crumbs )
  • Garlic, onion, or something else in the allium family, minced. Preserved lemon would be a good sub here.
  • Ideally a lemon, or lemon juice.
  • (optional) Parsley, chives, or other herb
Recipe:
Cut the cauliflower into florets, and cook or bake until tender
Meanwhile, melt the butter and let it get brown, fragrant, bubbly
Add the garlic or onion and cook for 30 seconds
Add the breadcrumbs, and season to taste
Stir and let the crumbs brown a little
Turn off the heat, zest the lemon into the crumbs, and sprinkle on some herbs
Serve the breadcrumbs over the cauliflower, with lemon wedges to squeeze on the side.

Nice to see new posts on The Bork Blog. I'll give this one a try. I've been looking for the simple cauliflower steaks that Samin Nosrat makes. If anyone finds them, please let me know!
